9/1/09 last night at school we learned a lot about ethical issues, labor issues and industry trends in the food industry. It was a tough assignment but I got through it. I am looking forward tonight's class. I have my first quiz. I have been studying a lot and I think that I am ready for the most part. We get to start making broths and stocks. Which means more bruniose and macedoine dices. And I am sure that we will be making a mireqoix for the stock and bouguet garni. Well it is back to studying my stuff. I will let everyone know how I did tomorrow.
