Day 4 in Student Success Skills Class

9/4/09 Last night was a good class we learned about getting our resume ready to go out into the world and get a job. Then a few of us got eat. I am not saying it was the best. I had a homemade pita bread and falafel. It was a little on the spicy side and the side dish was over seasoned. But that's what we are asked to do try something that you normally would not eat. Then for desert we had a verity of Boston cream pie things. There was a peanut, amaretto, white chocolate mango, and a raspberry. I liked the peanut one the best. But that i tried something that I have never would have. It was interesting to say the least. Well I now have 5 days off. I will not be back into class until Tuesday. I am looking forward to the break. But we still have lots of homework to do while we are off. Well that is it for now. So I will talk to y'all in a few days.

9/02/09 Good morning everyone well last night was a fun night. Once again I have all my fingers. We spent the evening in the lab. At the beginning of class we took our first quiz. I feel that I did a really good job. He put some extra stuff in the test, that he told us not to study, but I got those. He told us that if we got those right he would count them as extra credit. So I know I have some extra points. I was pretty excited that I came out of the test feeling pretty confident that I did a good job. I was kinda scared that I was not going to be able to get all this stuff packed into this big head of mine. But I got it done.

Ok so last night in lab we made a chicken stock. Which was chicken bones, 6 quarts water, a mirepoix, and a sacheet. Boiled it for a few hours. While we were cooking our stock we learned how to make garlic paste and cut the perfect julienne and brunoise out of carrots. Well OK mine were not so prefect. But I am working on it. Practice make perfect. And I need lots of practice. So if anyone needs some carrots, onions, celery, or garlic paste let me know and I will get it take care of it for you. Well got to go for now. 9/1/09 last night at school we learned a lot about ethical issues, labor issues and industry trends in the food industry. It was a tough assignment but I got through it. I am looking forward tonight's class. I have my first quiz. I have been studying a lot and I think that I am ready for the most part. We get to start making broths and stocks. Which means more bruniose and macedoine dices. And I am sure that we will be making a mireqoix for the stock and bouguet garni. Well it is back to studying my stuff. I will let everyone know how I did tomorrow.

Ok Everyone when you come to visit my site please just drop a quick line even is it is just a hey. So that I can see who is visiting and checking up on me. I am interested in who is visiting my sites and fallowing me while I am on my path to becoming a Chef. All post on here will be about school and what I have learned.
Ok so I just completed my first week at CIV. It is not going to be an easy road. But I am looking forward to the challenge. I am very excited to what my future holds for me. Yesterday while in lad we were giving a lot of information that we had to memorize in a short time. I was kinda scared. But I think I have most of it. I was surprised that by the end of the day I had it down. I went to a friends and told her what I hard learned and what I had to know by Tuesday for my first quiz. Well I told her and I was shocked that I could remember. It was the measurement. Also I have to know all these french works for cutting and know the sizes of each cut. Like a Brunois is a 1/8 x 1/8 x 1/8 cut. and Batonnet is 1/4 x 1/4 x 2-2 1/2 cute. These are french words and do not sound like they are spelled. I did not know that I was going to be taking French to lol. So after class I was talking to another student that is a month ahead of me and she told me a good tip to how to remember it. Ok Lets see If I can do this for you right now. Without looking at my paper. Hey and if you are reading this you may learn something. Here we go.
6 tsp= 1 oz
2 tbls= 1 oz
1 cup = 8 oz
1 pint= 16 oz
1 quart=32oz
1 gallon = 128oz
some of you have maybe already knew that. But hey when you have 50 vocab words and a pile of other stuff you have to learn in a short time it can be overwhelming. But I CAN DO THIS. My first test is on Tuesday. I will let ya'll know how I do.
