9/02/09 Good morning everyone well last night was a fun night. Once again I have all my fingers. We spent the evening in the lab. At the beginning of class we took our first quiz. I feel that I did a really good job. He put some extra stuff in the test, that he told us not to study, but I got those. He told us that if we got those right he would count them as extra credit. So I know I have some extra points. I was pretty excited that I came out of the test feeling pretty confident that I did a good job. I was kinda scared that I was not going to be able to get all this stuff packed into this big head of mine. But I got it done.

Ok so last night in lab we made a chicken stock. Which was chicken bones, 6 quarts water, a mirepoix, and a sacheet. Boiled it for a few hours. While we were cooking our stock we learned how to make garlic paste and cut the perfect julienne and brunoise out of carrots. Well OK mine were not so prefect. But I am working on it. Practice make perfect. And I need lots of practice. So if anyone needs some carrots, onions, celery, or garlic paste let me know and I will get it take care of it for you. Well got to go for now.
